The earliest reference to mustard in India is from the story of Buddha in the 5th century BCE. Mustard is also mentioned in early Muslim and Jewish texts. In the Christian New Testament, faith is spoken about in the context of a mustard seed.
Mustard became popular in England when it was served as a paste with meat, in the early 1700s. Mustard is often served as a condiment, because cooking the mustard tends to reduce the heat and flavor. In America, yellow mustard, which gets its bright color from turmeric, is the most common type. Coarsely ground seeds are used to make brown mustard. Dijon mustard (from Dijon, France or elsewhere) is another popular type.
Canada grows 90% of all the mustard seed for the international market. The Canadian province of Saskatchewan produces almost half of the world's supply of mustard seed.
